Everything lives on your iPhone. Export it in Settings → Backup, or erase it in Settings → Delete all my data.
Apple Health
Change what Throttle can read in the Health app: Sharing → Apps → Throttle.
Subscriptions
Manage or cancel the Throttle Subscription in your iPhone's Settings → your name → Subscriptions.
